Crowd-Pleasing Taco Salad

THE BEEF*

1 lb ground beef (* You may use turkey or sausage if desired.)
1/4 cup chopped onion
1/8 to 1/4 cup taco sauce

Brown beef in skillet. Sprinkle with salt and pepper as desired. Add onion when partially brown. Drain. Return to skillet. Add taco sauce, to taste.

THE VEGETABLES

1 head lettuce
3 medium tomatoes
1/2 medium green pepper
1 small can sliced olives

Slice or shred lettuce into bite-sized pieces. Cube tomatoes and pepper. Place all vegetables in a very large bowl.

PUTTING IT ALL TOGETHER

Thousand Island dressing
1/2 lb. sharp cheddar
@ 12 oz. Doritos

Add Thousand Island dressing to vegetables until very lightly coated. Toss.

Grate cheddar and add to vegetables in bowl. Toss.

Add beef mixture to vegetables in bowl.

Crumble Doritos into bowl. Toss.

Makes 6-8 servings. Keep refrigerated.
