Mama Jean's Zucchini Casserole
3-4 medium-sized zucchini squash
Slice zucchini into 1/2" rounds. Boil zucchini in a saute pan until tender and no longer white.
Crumble saltines into small bits.
PUTTING IT ALL TOGETHER
3 to 1 cup milk
In a casserole dish, layer zucchini, then cheddar, then saltines until dish is nearly full. Pour milk over layers up to about an inch from the top.
Bake in 350 degree oven for 45 minutes or until top is golden brown.
Serves 6. A great Thanksgiving side dish!
